The DO’s and DON’Ts of
Freeze Drying*/**
Do |
Do NOT |
Load the trays to the rim |
Fill trays beyond the rim. Max capacity is 12-16 pounds of food per batch or an average of 2.25-3.25 pounds per tray |
Prefreeze
your trays overnight |
Drop off un-frozen
foods |
Freeze dry soups, casseroles, breads, snacks, desserts, fresh
produce, pet foods, cooked grains, etc. |
FD butter, peanut butter, sweet/thick liquids (no syrup or honey for example) |

FD Chocolate flavored things such as the bready outside
of an ice-cream sandwich bar |
Freeze dry chocolate in all its other forms. In general, no chocolate. |
FD
candy (skittles, gummy bears, and taffy work especially well) |
FD licorice, lollypops,
or chocolate-covered candies |
Chop and space your food in a single layer when possible. The more airflow and surface area the better.
Example: load the tray with bite-size cheese snacks instead of full
slices |
Load a whole pie, meatloaf, or lasagna on a tray in one mass. |
